Bacon and Ham Quiche in Phyllo Cups

This delectable dish can be a crowd pleasing appetizer or a perfect addition to any Sunday brunch.  The perfect thing about this dish is that it is so versatile because you can add vegetables or substitute any of the meats for seafood to add your own touch.

Ingredients Are:

2 pkgs. of frozen phyllo pastry cups

6 oz. black forest ham chopped

1/2 lb. bacon (cooked crispy and crumbled) or 1 jar of real bacon bits

6 eggs

1/2 cup light cream

1/2 cup of shredded cheddar

2 tsp. McCormick’s French Herb

2 tsp. Salt

1 tsp. Pepper

Directions Are:

Preheat oven to 350 degrees.  Whisk eggs, cream and seasonings together till well mixed.  Add meat and cheese to mixture, stirring well.  Place phyllo cups on a greased cookie sheet and brush each one with melted butter.  Fill cups with mixture making sure you put an even amount of solid filling and egg mixture in each cup.

Place in oven immediately after filling, so the cups do not get soggy and fall apart.  Cook for about 10-12 minutes or until phyllo cups are crispy and filling is solid.  Serve immediately while still hot.  You can reheat these the next day in the oven on 350 degrees and they will still taste like you just made them. Enjoy!
