Bran Muffins

What could be more delicious then freshly baked bran muffins! This is a simple recipe that anyone can use to make the best muffins and it take no time at all. You can serve them for breakfast, for dessert, or even as an after school snack.

Ingredients:

1 1/2 cups wheat bran
1 cup buttermilk
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup raisins

Directions:

Preheat your oven to 375 degrees. Grease and flour muffin pans or use paper muffin liners.

Combine wheat bran and buttermilk and let stand for 10 minutes. Beat together egg, oil, vanilla, and sugar and then add to bran mixture. Sift the flour, salt, baking soda, and baking powder. Stir flour mixture into buttermilk mixture until completely blended. Then fold in raisins.

Use a spoon to pour batter in muffin pans.

Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
