Brandy Smoked Beer Can Chicken

For all of you people who love to cook on the grill then this is the perfect recipe for you. Brandy smoked beer can chicken is a great recipe that is easy to cook on the grill. Now you want to give yourself time to prepare and cook it thoroughly. You can cook this for the family, but it is better to cook it for a large group because of how much you’ll be cooking. Either that or you will have lots of leftovers.

Ingredients Are:

1 large fryer chicken (clean out cavity and outside with water and pat dry with paper towel)

McCormick’s Herb de Provence
2 tablespoons of brown sugar
2 tablespoons of chopped garlic
1 large can of a full body beer
1/4 cup of chicken stock
2 tablespoons of brandy
2 teaspoons of lemon juice
2 tablespoons of butter
2 cups of hickory chip

Directions:

Mix a few tablespoons of Herbs and brown sugar. On low heat mix garlic, chicken stock, brandy, lemon juice and butter together till reduced. When reduced add brown sugar and herb mixture and stir. Turn off heat and let cool.

Pierce chicken with a sharp knife or piercing tool all over the chicken. In a leak-proof bag place chicken and pour sauce over it. Seal bag and take out air. Soak for 24 hours. Soak chips and half of beer for about thirty minutes. While chips are soaking turn all burners in grill on high.

After chips are done soaking drain them and place them in foil and pierce the top several times. Shut off one side of grill and place chips on the high heat side of the grill. Take a drip pan and place the can of beer in it.

Place chicken on top of beer can and tuck wings underneath so they do not burn. Baste whole chicken with butter and place on cool side of grill. Baste every 30 minutes with butter and cook until juices run clear, which will be roughly 2-1/2 hours later. Remove carefully and let set for 10-15 minutes until juices have settled inside the chicken.
