Chardonnay Chicken Breast
This recipe is one of the best mixtures of ingredients that you will ever taste. It makes a great meal for a romantic dinner for just you and your loved one. Not only does it taste delicious it also smells great and will make your mouth water before you even taste it.
Ingredients Are:
6 boneless, skinless chicken breasts pounded flat
12 oz. roasted garlic chicken sausage crumbled without casings
6 tbsp. olive oil
2 oz. pecans chopped
1 oz. sun dried tomatoes
1/8 lg. sweet onion
1 clove crushed garlic
16 oz. white Chardonnay
1 c. chicken broth
¼ tsp. white pepper
3 pinches salt
Directions Are:
Place 3 tbsp. of olive oil in large skillet and sauté sausage, pecans, tomatoes, onion and garlic, white pepper and salt for 10 minutes stirring constantly. Add 8 oz. Chardonnay and reduce until liquid in mixture is cooked out, pour into bowl. Stuff each chicken breast with a generous portion of sausage mixture and braise remaining olive oil in stuffing skillet until brown on all sides. Place chicken seam side down in bottom of 10X13 baking dish.
Combine broth and remaining Chardonnay and stir in stuffing pan until the pan goodies are loosened, pour mixture over chicken and bake in 350 degree oven for 30 minutes basting every 7 minutes. Broil the chicken for 10 minutes or until nicely brown, just before serving. Top with ¼ c. of liquid and a dollop of loose stuffing (if any on each breast).
