Creamy Risotto

This dish makes a great addition to any seafood meal, or it can even be a meal in itself if you add smoked salmon or shrimp.  Its rich and creamy texture make it a huge success with little work on your part.  So enjoy!

Ingredients Are:

1 cup of uncooked Arborio rice

3 tbsp. butter

1/4 cu. white cooking wine

1 tbsp. minced garlic

3 cu. chicken broth

1/2 tsp. salt

Directions Are:

Cook butter and rice and garlic in a large skillet on high heat for about 1 minute, stirring constantly.  Reduce heat to medium and add salt and wine, still stirring constantly until wine is absorbed.  Add 1 cup of broth at a time, stirring constantly until broth is absorbed after each addition.  This will take approximately 30-40 minutes until rice becomes a creamy consistency.  Remove from heat and top with Parmesan or any fresh grated cheese of choice.

Note: To make this vegetarian just substitute vegetable broth for chicken broth.
