Crouton Crusted Salmon

You really have to use salmon in this recipe because the garlic butter croutons used just blend well with the flavor of the fish.  This is a favorite among many and can be paired well with a creamy risotto and some freshly grilled asparagus.

Ingredients Are:

4 filets (not steaks) of salmon

4 cups of garlic butter croutons

8 tbsp. melted butter

4 tbsp. lemon juice

Salt

Lemon Pepper

Directions Are:

Spray cooking spray into a 9×13 cooking pan.  Take filets and place them in the pan and season with salt and lemon pepper.  In a bag take your croutons and pound them till they are semi-fine yet not crushed.  Add melted butter and lemon juice to croutons and mix well. 

Take a hand full of crouton mixture and place carefully on top of each salmon.   Bake at 375 degrees for about 30-40 minutes until salmon is no longer a dark pink inside.  If croutons are still moist, broil for a few minutes but be sure to watch them carefully to make sure they do not burn.  Serve immediately and enjoy!
