Curry Rice
Curry rice is definitely one of the more unique side dishes that we have seen. It is a blend of many different seasonings one of the main ones obviously being curry which is has a unique taste to it. This dish is something that many people will enjoy and can go with almost meal. It also doesn’t take long to prepare and cook.
Ingredients:
2 ½ c. Raw Jasmine rice
32 oz. Chicken Broth
1/2 stick salted butter
3 tbsp. olive oil
1/4 c. coarsely chopped red onion
3 tbsp. Curry
1 tbsp. Sugar
1 tsp. Salt
Directions:
In large skillet with cover, sauté onion in butter and olive oil on medium-high heat. When onion is translucent, add rice and sauté until rice is white and crunchy. Combine curry, salt and sugar in small cup and blend thoroughly. Add to rice and onions, stir until blended into mixture. Add chicken broth and bring to gentle boil. Cover and turn to low heat. Cook approximately 20 minutes fork stirring periodically.
