Jasmine Rice Pilaf

This is a quick and easy side dish for any meat, fish or poultry that you are serving. It is so light and healthy that you won’t feel guilty when you savor the aromatic jasmine and spices from the mix. People will think that you worked hard to achieve such a delectable accompaniment. This is also a dish that is great the following day with a different main course.

Ingredients are:

2 1/2 c. jasmine rice
32 oz. can organic chicken broth
1 pkq. Knorrs Spring Vegetable Soup Mix
Salt & pepper to taste
1/4 c. oil olive

Directions Are:

In a deep non-stick skillet with a lid, sauté rice in oil olive for about 1 minute on med-high until it starts to turn slightly white. Add spring vegetable mix quickly and stir. Add chicken broth and salt & pepper stirring thoroughly. After bringing to a slow boil, turn on low and simmer for 20 minutes for fluffier rice, or longer if you want the rice to be more sticky. Fork stir every 8-10 minutes.
