Mini Cheesecakes

Thanksgiving is all about the turkey and the stuffing and the casseroles. Christmas is all about the desserts. The pies, fudge, cookies, and of course the mini cheesecakes. These are great to make and something that everyone loves.

Ingredients

  • 2 (8 ounce) packages cream cheese
  • 3/4 cup white sugar
  • 2 eggs
  • 1 ½ teaspoon vanilla extract
  • 1 (12 ounce) package vanilla wafers
  • 1 (21 ounce) can cherry pie filling

Directions

Preheat oven to 350 degrees. Line the miniature muffin tins with paper liners. Crush the vanilla wafers and pour ½ tablespoon into the paper muffin tins.

With an electric mixer combine sugar, cream cheese, eggs, and vanilla. Fill the miniature muffins tins with mixture.

Bake at 350 degrees for 15 minutes. Cool and then top with a spoonful of cherry pie filling.
