I know the name sounds interesting and odd – but these noodles are absolutely delicious and not something that should be missed.

Ingredients:

1/2 cup chicken broth
1 1/2 tablespoons minced fresh ginger root
3 ½ tablespoons soy sauce
3 tablespoons peanut butter
1 1/2 tablespoons honey
1 ½ teaspoons hot chile paste (optional)
3 cloves garlic, minced
8 ounces Udon noodles
1/4 cup chopped peanuts

Directions:

Boil a large pot of water. When water is boiling add the noodles and cook until they are tender. Drain when finished.

While pasta is cooking combine ginger, soy sauce, chicken broth, honey, peanut butter, chili paste, and garlic into a small saucepan. Cook them together over medium heat until the peanut butter is melted and the combination is heated through.

Add the noodles and toss them in the saucepan till they are thoroughly coated.
